Friday Night Cocktails: Caribbean Mule

Yes yes, I know it's Thursday but I can't wait until Friday to post.  First a little background...


When my family moved into our new place we gave away some of our liquor to our friends who helped us pack and move (great gift right?) so our stash has depleted.  We've been trying to rebuild so I decided to make a night of the week dedicated to trying new cocktails which will surely help us get back to our collection.  Looking forward to starting Friday Night Cocktails with my husband and if others want to come over and join; I'm all for it.  I chose Friday as the night for this but I am also thinking Monday will work?  What do you think?


So here is the first cocktail.  My husband and I went to Michael Jordans Steakhouse for our anniversary and he ordered the Caribbean Mule.  I tried it and loved it!  So make one with me:


Caribbean Mule


What you'll need: 

• 1.5 ounces of Dark Rum

•  1/4 ounce of Campari

• 1/4 ounce of simple syrup

• 1/4 ounce of fresh lime juice

• 1 ounce of fresh pineapple juice

• 1.5 ounces of Gosling's Ginger Beer


Let's Make it! 

This part is super simple just combine the Rum, Campari, Simple Syrup, lime juice and pineapple juice in your shaker and shake well... super well... it helps to have your favorite song playing... then poor into a tall collins glass or a copper mug filled with ice.  Top it off with your ginger beer and a lime wedge to make it extra pretty.  That's it!  A great refreshing cocktail.
