Ever since the instant pot came into my life, it has made my day-to-day so much easier especially when it comes to dinners and meal prep. I'm sharing my favorite instant pot meals that make this full-time work-at-home mom of 4 life so much easier and efficient. The first one is my own recipe (kind of). So easy even the boys help! I hope you enjoy it!
1. Instant Pot Red Beans and Rice
Zatarain's red beans and rice mix
2-1/2 cups chicken broth or water
2 Tablespoons butter or olive oil (I use olive oil)
1/2lb of andouille sausage
1/2lb of chicken (I use thighs you can also use breast)
Set instant pot to saute and add 1 tbsp of butter or olive oil and brown sausage and set aside.
Then add the remaining butter or olive oil and brown chicken on all sides and set aside and turn off the instant pot.
Use a small amount of water to deglaze and clean the bottom of the instant pot by scraping up the browned bits.
Add sausage and chicken back to the instant pot. Add 2-1/2 cups of water (or broth) and Zatarain's mix to the instant pot. Set instant pot to manual high pressure for 12min. Close top and make sure valve is sealed. Let cook.
Once finished, turn the valve to release and let the pressure out. Give a stir and you're all done.
